Mary Campbell was the owner and chef at Medley’s Cafe in Corning and Prattsburgh, NY for several years. Her Corning Medleys featured organic and locally grown foods long before the farm to table movement began. Campbell has an ability to create tantalizing dishes from common everyday ingredients found in the home garden. Her passion for cooking has recently taken a new direction into the world of education. She currently works as the Culinary Instructor at a local BOCES high school emphasizing the importance of food safety, sustainability and using locally sourced ingredients.
